Last week at a dentist's office, we found a granola recipe in an older Highlights magazine. I took pictures of the recipe, and yesterday we modified it to make it work for our family (and pantry).
Our Mothership Adventures Coconut Granola
6 cups of oats
1 cup of dried unsweetened cranberries
1 cup of black raisins
1 cup of golden raisins
2 cups of chopped pecans
1/3 cup of sunflower seeds
1/4 cup of lightly salted pumpkin seeds
5 tbls of wheat germ
1/2 cup of unsweetened coconut flakes
1 cup of liquid coconut oil (it's so cold in Maine mine has been in a solid state since June)
1 1/2 cups of Agave syrup
Mix everything together and make sure to coat all dry ingredients with wet ones. Spread on two trimmed cookie sheets, that have been covered with aluminum foil and lightly sprayed with vegetable oil. Pat mixture down, and bake in 300F oven for apprx. 35-45 minutes, until golden brown. Let cool, then break into small pieces, and store in an airtight container.
For our granola, we used Tropical Traditions Virgin Coconut Oil, and I have to say, I loved it! Our granola wasn't overly coconutty, in fact, it was just perfect:)

ReplyDeleteLooks like a great granola recipe! Yum. AND... I'm a big fan of Tropical Traditions Coconut oil. It does stay pretty solid. Just sit the glass jar into a bigger container of hot water, and then its pourable. I use TT coconut oil in all kinds of kitchen baking, including gluten-free pancakes.
